Usually when I bake I like to buy store bought icings, since there easy to work with and very tasty. For once I decided to try out a homemade recipe for icing that my sister found from the Rachel Ray website. I added my own ingredients too since homemade icing to me is way too sweet. Below you will find the recipe.
Ingredients:
2 1/2 sticks unsalted butter, at room temperature
5 cups of confectioners sugar (I used 4 since I thought 5 was way too much)
1 Tablespoon of Vanilla Extract
1 to 2 Tablespoons of Milk (I used 2 Tablespoons)
*I also added a quarter cup of melted marshmallows and two spoon fulls of sour cream. This to me helped take the extremely buttery and sugary taste a little down*
Directions:
Using a mixer, beat the butter on medium speed until creamy. Add the confectioners sugar 1 cup at a time, making sure it smooth after adding each cup. Add the vanilla extract and milk. (Here I also add the marshmallows and sour cream) Beat on high speed until fluffy.
The icing came out good, still needs some work, but I have to say it was a job well done for my first time making homemade icing. I haven't used this recipe yet on a cake or cupcakes, but I will be soon.
